小豆がないのでレッドキドニービーンズを茹でて水羊羹のようなものを作っています。
乾燥した豆を一晩水に漬けるときに重曹を入れることを覚えました。
圧力鍋で煮るときに豆の腹を破るようにしています。
そうすると溶けた砂糖が豆に浸み込みおいしくなります。
粉寒天の在庫が少なくなったのでゼラチンを多く使って固めています。
グラスに煮た豆と煮汁とドライマンゴー・ドライココナツ・レーズンを代わる代わる入れて目先を変えています。
生姜の汁やカラマンシーの絞り汁を試したこともありましたが今は止めています。
羊羹の型を見つけましたがロックグラスを使った方が冷やすにも食べるにも洗うにも手間いらずなので使い続けています。
食べるときはロックグラスにスプーンを入れて塊を口に運んでいます。
食べているあいだは口の中が涼しくなります。
人工甘味料や保存料は使っていないので爽やかな後口が残ります。

I change things up by alternately putting boiled beans, cooking liquid, dried mango, dried coconut, and raisins in a glass.
I've tried using ginger juice and squeezed calamansi juice, but I've stopped using them for now.
I found a yokan mold, but I continue to use a rock glass because it's easier to cool, eat, and wash.
When I eat, I put a spoon into the rock glass and bring the chunks to my mouth.
It cools my mouth while I'm eating it.
No artificial sweeteners or preservatives are used, so it leaves a refreshing aftertaste.
