煮干しの出汁をとりました。 I made dried sardine broth.

 

　煮干しの粉で出汁を倍の濃さで作りました。

出汁をとっているあいだに出てくる灰汁はとりません。

冷めてからコーヒーのフィルターで漉しました。

試しに煮干しの出汁で味噌汁を作りました。

おいしくて２杯飲んでいしまいました。

満足してそうか々と独り言をくりかえしました

私はかつお出汁より煮干し出汁の味噌汁がすきです。

 I made dashi (broth) twice as strong using dried sardine powder.
I didn't remove the scum that rose to the surface while the broth was simmering.
After it cooled, I strained it through a coffee filter.
I tried making miso soup with the dried sardine broth.
It was so good I drank two bowls.
I was so satisfied that I kept muttering to myself, "This is good!"
I prefer miso soup made with dried sardine broth to one made with bonito broth.

米麹で作った甘酒は甘くておいしい。 Amazake made with rice koji is sweet and good.

 

　初めて米麹で作った甘酒を飲みました。

その甘さに驚きました。

時代劇で茶屋に甘酒とよく書いてありました。

当時の旅人はこの甘い味を楽しんでいたんですね。

口直しに紫蘇の実の醤油漬けでも出たのでしょうか。

　材料は米麹とご飯と水です。

ヨーグルトメーカーで５５℃で１２時間設定にしました。

発酵の途中で容器の中の甘酒をかき回すと甘みが増すようです。

冷たい甘酒もおいしいですね。

米麹は冷凍がきくので保存が楽です。

 I tried amazake made with rice koji for the first time.
I was surprised by its sweetness.
In historical dramas, amazake was often advertised at teahouses.
Travelers of that time must have enjoyed this sweet taste.
Perhaps they were served pickled shiso seeds in soy sauce as a palate cleanser?

 The ingredients are rice koji, cooked rice, and water.
I set my yogurt maker to 55°C for 12 hours.
Stirring the amazake in the container during fermentation seems to increase the sweetness.
Cold amazake is also good.
Rice koji can be frozen, making it easy to store.

新しい圧力鍋を使ってみた。 I tried out my new pressure cooker.

 

　新しい小型の圧力鍋で赤飯を炊きました。

おいしい赤飯が出来ました。

大きい圧力鍋を炊飯に使ってこの圧力鍋は調理用に使います。

炊飯用の圧力鍋で豚や鶏を調理すると脂を洗うのが大変です。

　I cooked red bean rice in my new small pressure cooker.
I made good red bean rice.
I use my larger pressure cooker for cooking rice, and this one for cooking other dishes.
When I cook pork or chicken in a pressure cooker designed for cooking rice, it's a lot of work to wash off the fat.

KB家のママレード。 KB's marmalade.

　 KB家のママレードと私の作ったママレードを交代に食べています。

KB家のそれは夏みかんで作られていて雑味のない洗練された味です。

自作のそれは現地産の文旦・ポメロが原料です。

ママレードをとる容器の場所により味が変わります。

自分では丁寧に作ったつもりですが皮付きの果肉があって雑味があります。

仕方がありません・・・

 I alternate between eating KB's marmalade and the marmalade I make.

My homemade marmalade is made from locally grown pomelo.
The taste changes depending on where I take the marmalade from the container.
I made it carefully, but it has fruit pulp with the skin still on, so it has deferent taste.
There's nothing I can do about it...

天ざる蕎麦もどき。 It was just like the tempura soba you get at a restaurant.

　イカとエビといんげん豆の天ぷらをあげました。

残った衣で揚げ玉を作りました。

いただきもののそばを茹でて天ざるもどきを食べました。

１０年前なら完食ですが全部食べられませんでした。

満ち足りた気持ちです。

腹が張ると目がたるむので昼寝をしました。

 
 I fried squid, shrimp, and kidney beans.
I made fried tempura bits with the leftover batter.
I boiled some soba noodles that I had been given as a gift.
I ate that together with the tempura.
Ten years ago, I would have finished it all, but this time I couldn't.
I felt very satisfied.
When my stomach is bloated, my eyes start to droop, so I took a nap.

　日本茶を淹れていただきものの煎餅をかじり奥歯で噛みました。

焦げたしょうゆ味が口の中に広がりました。

お茶を一口すすってまた煎餅を食べました。

次回用に袋半分の煎餅を残しました。

　いただきものの干し柿を食べました。

普段食べている洋菓子の甘さと違った上品な甘さです。

種の周りの果肉がおいしいですね。

お茶を口に含んで甘さを楽しみました。

 I brewed some Japanese tea and took a bite of the rice cracker I had received as a gift, chewing it with my back teeth.
The taste of burnt soy sauce spread throughout my mouth.
I took a sip of tea and ate another rice cracker.
I saved half the bag for next time.

 I also ate the dried persimmon I had received as a gift.
It had a refined sweetness unlike the Western sweets I usually eat.
The flesh around the seed was good.
I took a sip of tea and enjoyed the sweetness.

ヨーグルト。 Yogurt.

　ガラスの容器を傾けてもゲル化した牛乳は流れません。

２４時間で５００ｍｌの牛乳はヨーグルトになりました。

今の季節は最低気温が２３，２４℃で最高気温は２９，３０℃です。

カスピ海ヨーグルトの種はこれで終わりです。

　次回からヨーグルトメーカーを使ってヨーグルトを作ります。

いままでヨーグルトメーカーは温泉卵や納豆作り（うまくいきませんでした）に利用していました。

付属の容器が２つあるので納豆で使わなかった容器で作ります。

納豆菌は生命力の強い菌だそうです。

酒造りの杜氏さん達は納豆を食べないそうです。

そんな強い納豆菌を使っても納豆を作れませんでした。

大豆を無駄にしました。

 The gelatinized milk will not flow even when the glass container is tilted.

　タグビラランで一番高い店にパンシットカントンを食べに行きました。

値段ではなく高低の高さです。

あまり注文する人がいないのでしょうか、”２２分待ってね。”と言われました。

待ち時間の端数の２分がおかしくて笑いそうになりました。

　それは私の作る焼きそばとは味付けが違いました。

”そうか牡蠣油を使うのか。”　”生で食べられる野菜は炒めないでのせるだけでいいのか。”　等々料理の勉強をさせてもらいました。

”脂身のある肉を使うとおいしいね。”　”セロリの茎は炒めるとシャリシャリして旨いね。”　等など思っているうちに食べ終わりました。

　前は注文すると一品３人前くらいの量がありました。

今は小盛りが注文出来るようになったので気軽に一人で店に入れます。

糠。 Rice bran.

 

　気温が３０℃を越えない日は部屋の風通しの良い場所に糠漬けを置いています。

冷蔵庫から糠漬けを出した時は一日にぬか床を２回かき回します。

酸味がおいしくなりました。

　こちらの人はにおいに敏感です。

右手の爪を切ってもらう時にぬかの匂いを感じるようです。

　糠漬けをかき回した右手を石鹸で洗ってからにおいをかいでみました。

左手と右手はにおいが違いました。

右手の爪の間の糠をブラシで落とすとにおいは消えました。

 On days when the temperature doesn't exceed 30°C, I take the nukazuke to a well-ventilated spot in the room.
When I take the nukazuke out of the refrigerator, I stir the rice bran pickling bed twice a day.
The sourness has become good.

 People here are sensitive to smells.
They can smell the rice bran when they cut my right hand's nails.

 I washed my right hand with soap after stirring the nukazuke and then smelled it.
My left hand and right hand smelled different.
I brushed the bran from under the nails on my right hand, and the smell disappeared.

麺と食パン。 Noodles and White bread.

　モールに乾麺がなくなりました。

生うどんと称するものを売っていましたが保存料が怖くて買えません。

　天ぷらをあげてHBでうどんを捏ねました。

冷たいうどんにてんぷらをのせて食べました。

鯵は油でおいしくなりますね。

　薄口醤油がなく乾燥シイタケで出汁をとったので色の濃いうどんつゆになりました。

うどんは素麺より食べごたえがあって腹にたまるりますね。

 The mall has run out of dried noodles.
They were selling something called fresh udon, but I'm afraid of the preservatives, so I can't buy it.

 I fried the tempura and kneaded the udon noodles in a bread machine.
I ate it with cold udon noodles topped with tempura.
The horse mackerel was good when deep-fried in oil.

 I didn't have any light soy sauce, so I made a stock with dried shiitake mushrooms, which turned the udon soup dark.
Udon is more filling and satisfying than somen noodles.

　モールから日本米が消えてしばらく経ちます。

通販で日本米を買うとモールで売っていた倍の値段です。

　パンはHBで食パンモードで焼いています。

同じ材料を使って焼いても毎回出来上がりが違います。

気温がイースト菌の発酵に関係しているのでしょうか。

Even when I use the same ingredients, the result is different every time.

　久しぶりにボホールのモールの４階にあるレストランに行きました。

マネージャーさんはお元気でした。

海側をガラスのカーテンウォールにしたので店内が明るくなりました。

パングラオ湾がよく見えました。

　メニューに普通と小がありました。

小の混ぜご飯のようなものとカラマリを頼みました。

混ぜご飯の甘じょっぱいチャーシュウはおいしかったです。

カラマリのイカは柔らかくはサクッと揚がっていました。

付け合せの野菜揚げがとてもおいしかったです。

　マネージャさんが店員の対応と食べ物の味を聞きに来ました。

もちろん丁寧に受け答えしました。

店のテーブルが大きく配置がゆったりとしていました。

次回は焼きそばのパンッシットカントンを頼もうと思っています。

 It's been a while since I last visited this restaurant on the ４th floor of a mall in Bohol.

The manager was in good health.

I had a great view of Panglao Bay.

 There were regular and small sizes on the menu.

I ordered a small portion of something like mixed rice and calamari.

The sweet-and-salty roast pork with mixed rice was delicious.

The calamari squid was fried to a tender yet crispy consistency.

The fried vegetables that came with it were very tasty.

 The manager came to ask about the staff's service and the food's taste.

Of course, I responded politely.

The tables were large and spaciously arranged.

Next time, I'd like to order the fried pansit cantong.

とろみがついた。 It's thickened.

 

　バイオフルーで汗を出したせいでのどの痛みも咳も止まりました。

　ママレードのとろみは種からペクチンを抽出してつけることをfacebookでKBさんの奥さんから教えてもらいました。

ポメロの果肉を薄皮ごと細かく切ってママレードに混ぜ煮なおしました。

ママレードにとろみが出ました。

焼き立てのパンに温かいママレードをのせて食べました。

果肉を入れたせいでしょうか弱いミントの香りが鼻を抜けてゆきました。

　不思議ですね。

自分で作った食べ物はどうしておいしいんでしょう。

 Sweating with BioFlu helped my sore throat and cough to subside.

 KB's wife told me on Facebook that marmalade thickens when pectin is extracted from the seeds.
I finely chopped pomelo pulp, including the skin, mixed it into the marmalade, and simmered it again.
The marmalade now had a nice consistency.
I spread the warm marmalade on freshly baked bread and ate it.
Perhaps it was because of the fruit pulp, but a faint mint scent wafted through my nose.

 It's strange.
Why is it that food I make myself tastes so good?

ママレードを作りました。 I made marmalade.

　ポメロ・文旦の果皮を使ってママレードを作りました。

果皮をスライサーで薄切りにしましたがスライサーで指をざっくり切った記憶が蘇り怖くなって包丁に代えました。

包丁で切ったほうが早くて安全ですね。

　ケーキに乗せて食べました。

美味しかったです。

柑橘類の香りが鼻に抜けてゆきました。

固まり方が弱かったのでペクチンがほしいです。

 I made marmalade using pomelo peels.
I used a slicer to thinly slice the peels, but the memory of cutting my finger with the slicer came back to me, so I got scared and used a knife instead.
Cutting it with a knife is faster and safer.

 I set it atop a cake and ate it.
It tasted good.
The scent of citrus fruits filled my nose.
It didn't solidify easily, so I'd like to add some pectin.

汁粉寒天。 Agar is added to sweet red bean soup, which is then cooled and solidified.

　赤インゲン豆で汁粉寒天を作りました。

暑い日に冷たい汁粉寒天を食べるとほっとします。

ボールに取り分けた煮豆は赤飯に使います。

ラーメンの麺は固茹でだった。The ramen noodles were hard-boiled.

　こちらで買った"ラーメンの袋"にはアラビア文字が書いてありました。

その麺でソース焼きそばをつくりました。

硬い麺は嫌いではありませんがこれは硬すぎます。

焼きそばに使うには蒸すか湯がいてから使ったほうがよさそうです。

　最近はラーメンよりうどんです。

HBでうどんを捏ねて冷蔵庫で一晩寝かせます。

パスタマシンを使うより手で延ばして切ったほうが簡単で時短です。

うどんは温かくしても冷してもおいしいですね。

丸亀うどんの真似をして野菜やイカ・エビ・魚の天ぷらをうどんの上にのせています。

　通販でおいしそうなうどん粉を売っていました。

他のものと一緒にこちらに送ってもらいます。

 The "packet of ramen" I bought here had Arabic writing on it.

　パスタを何種類か食べ比べました。

バリラのパスタの味が一番いいですね。

それでペペロンチーノを作ってもそれにトマトソースをからめてもパスタが美味しいんです。

　驚いたのはパスタの種類の多い事です。

店には２０種類くらい並んでいました。

　食べ比べた中には変に粘っこいパスタもありました。

捨てるのはもったいないので我慢して食べました。

たけどもうそのメーカーのパスタは買いません。

 I tried several different pasta tastes.
Barilla pasta tastes the best.
Whether I make it pepperoncino or coat it in tomato sauce, the pasta is good.

写真の容れ物ともう一つ小型の容れ物をこちらに来てすぐ買いました。

我慢して今まで使ってきましたが２つとも蓋と本体の螺旋のかみ合わせが悪いんです。

蓋が閉まりにくく、開けずらいんです。

ダイソーも出来たことですし新しい容器を買おうと思ってでかけました。

買おうとするたびに"昭和生れのもったいない"が頭をもたげてきます。

”家に２つあるのにもったいない”　”使える容器があるのに買うなんてもったいない”

買いかえが出来ません。

　自分で料理しているうちにレシピがだんだん簡単になってきました。

煮込み料理以外は時間をかけなくなりました。

　トマトソースはイタリアとスペインの角切りのトマト缶を使っています。

前は人参のすりおろしと玉ねぎのみじん切りを入れていました。

今は玉ねぎのみじん切りだけを入れています。

パスタを茹でる前に玉ねぎを炒めてからトマトをいれます。

茹で上がったパスタに半分のトマトソースを使います。

　残りの半分は別の日にスープに入れています。

じゃがいものグラタンなど作った料理の使い回しができるようになりました。

料理の時間が短かくなり品数が増えました。

いつのまにか料理の間に皿や調理器具が洗えるようになりました。

 As I cooked for myself, my recipes gradually became easier.

 I use canned diced tomatoes from Italy and Spain for my tomato sauce.
I used to add grated carrot and chopped onion.
Now I just add chopped onion.
Before boiling the pasta, I sauté the onions and then add the tomatoes.
I use half of the tomato sauce with the boiled pasta.

 I add the other half to the soup on another day.
I've been able to reuse dishes I've made, like potato gratin.
Cooking time has shortened, and the variety of dishes has increased.
Before I knew it, I was washing plates and utensils between cooking sessions.
